Ingredients:

  • 1 cup of peaches
  • 2 cups of pineapple
  • 1 cup of apricots
  • 1 cup of raspberries
  • 2 medium kiwis
  • ½ cup of uncooked couscous

Dressing Ingredients:

  • 2 tbsp of honey
  • 3 tbsp of fresh lime juice

Directions:

  • Peel and chop peaches, pineapple, and kiwi (if using fresh fruits)
  • Boil one cup of water and add the couscous — stir, cover, and remove from heat
  • Combine all the fruit and add to the cooled couscous
  • Whisk together the honey and lime juice — pour over fruit mixture and mix gently

Easter Egg Fruit Tart

Ingredients:

  • 1 cup of almond butter
  • ¼ cup of honey
  • 2 tsp of vanilla extract
  • ¼ teaspoon salt
  • 2 cups of dry oats
  • ¾ cup of vanilla Greek yogurt
  • ¾ cup of strawberries
  • ¾ cup of blueberries
  • 1 medium banana
  • ¾ cup of green grapes

Directions:

  • Heat the almond butter, honey, salt, and vanilla in a microwave for about 20 seconds and stir until smooth.
  • Blend one cup of oats until finely chopped — set aside
  • Add the rest of the oats to the butter mixture and stir. 
  • Slowly add blended oats to the mixture
  • Form Easter Egg-shaped ovals from the mixture
  • Spread each egg with greek yogurt and add the sliced fruit
