Peach and Basil Breakfast Biscuits (Crumpets)

There is nothing more satisfying than delicious biscuits with fresh Wawona Signature Peaches on top. It is the perfect addition to your morning coffee or tea, and is the perfect amount of sweet and savory in each bite! Wawona Frozen Foods is happy to provide Signature Peaches to create the perfect breakfast dish.

Biscuits
2.5 Cps. Bisquick Flour 
2/3 Cp. Buttermilk
½ Cp. Wawona Signature Peaches- lightly pureed
½ Tbs. Dried Basil
Peaches and Cream Topping
6 Tbs. Cream Cheese
2 Cps. 4+1 Peaches
1 Tbs. Butter
½ Cp. Chiffonade Fresh Basil
(Makes 6)

Preparation
Mix the flour, dried basil together, add in the peaches and buttermilk and mix until incorporated. Dough should be wet and sticky. Using a #14 scoop dish out into large muffin pans. Bake in a preheated 350-degree oven low fan for 14-16 minutes.

For the Topping
In a sauté pan, place butter and peaches and sauté until lightly caramelized and juice has reduced.

Build
Place 2 muffins on a dish, place 1 Tbs. Of Cream cheese on the side and top cream cheese with ¼ Cp. Of Peaches. Garnish with fresh Basil. Serve warm.

Peachy Cheddar Grits

Healthy and refreshing meets comfort food! This dish is incredibly simple to make and irresistibly delicious. Wawona Frozen Foods’ Signature Peaches is the perfect addition to this classic dish, perfect for any time of year. 

4 Cp. Water 
1 ½ Cp Stone Ground Grits 
1 stick of butter 
1 Cp of Wawona Signature Peaches 
2 Cp. Shredded Cheddar Cheese 
½ tsp. salt 
(Serves 4) 

Bring water to a boil, slowly add in the grits, bring back to a boil and then lower the heat to a light simmer stirring often. Once the grits are hydrated, fully cooked and no remaining water, add in the peaches, butter and stir rapidly until creamy. Finish with folding in the cheddar cheese. Serve. 

Can be served with 2 slices of thick sliced candied bacon, or a slice of ham steak.

Caribbean Fish on Grilled Cornbread with Jamaican Peach Slaw

Nothing screams late summer more than fresh fish and delicious peaches. An unlikely pairing, this combination melts in your mouth and leaves you wanting more. Wawona Frozen Foods can provide the most delicious Signature Peaches to accompany this dish. 

Ingredients
1- 3″x6″ slice of cornbread
1 6oz Mahi, Snapper or Grouper- really any warm water fish will do 
1 tsp. Badia Complete Seasoning 
½ Cp. Jamaican Slaw
1oz of Crispy Jalapenos 

Cornbread 
Using a store bought cornbread mix and baking off on a 9×11 sheet pan. Replace 25% of liquid with same amount of Signature Peach juice and bake until toothpick removes clean from center. Let cool. 
Jamaican Slaw 
12oz of fresh shredded slaw mix 
1 Cp. Chopped Scallions 
1 tsp. Badia Sazon Tropical 
½ Cp. Of Peach Dressing (see above recipe) 
Mix altogether and let refrigerate for 1 hour before serving 
Assembly 
Rub the fish with the Complete Seasoning and grill until 145 degrees. 
Slice the cornbread into 3″x6″. Griddle or warm the cornbread, place the fish on top, slaw next and then garnish with the crispy jalapeños.

Peach French Toast!

INGREDIENTS 
8 pc. thick sliced Multi-grain bread 
3 eggs 
1cp. Milk 
½ Cp. Signature Peaches- pureed 
1/8 tsp. ground nutmeg 
4 Tbs. Butter + 4 Tbs. Melted Butter 
24 slices of Wawona Freestone IQF Peaches 
¼ tsp Lavender 
(Serves 4) 

PREPARATION 
Beat the eggs, milk, peach purée and nutmeg together. In a hotel pan, layout the bread. Pour over the egg/milk/peach mixture and let absorb overnight in the refrigerator. In a sauté pan, sauté the 4 Tbs butter and the peaches, add in the lavender and sauté until caramelized. Keep warm and set aside for service. On a flattop griddle, place each bread slice and sear for 2 minutes or until medium brown in color, flip, press and do the same. Cut the bread in half and serve 4 pc with approximately 6 peaches on top, garnish with fresh whipped cream if desired.

Peach, Tomato, and Fried Farro Salad with Burrata

Everyone wants something light and satisfying in the summer that is bursting with summer produce. The combination of juicy peaches and tomatoes pairs beautifully with the creamy burrata. The final addition of fried farro gives the salad a wonderful crunch, and is also easy to prepare. 

INGREDIENTS 
– 4 cups canola oil 
– 1 (8.5 oz) pouch of pre-cooked farro (~ 1 ¾ cups) 
– ½ teaspoon kosher salt 
– 1 lb. assorted small and large heirloom tomatoes, cored and cut into 1 in. wedges 
– 2 medium peaches, cut into 1 in. wedges 
– 2 cups baby arugula 
– ¼ cup very thinly vertically sliced red onion 
– 2 tablespoons thinly sliced fresh mint 
– 3 tablespoons extra-virgin olive oil 
– 1 ½ tablespoons white wine vinegar 
– ¼ teaspoon black pepper 
– 2 (4 oz) balls burrata cheese, torn in half 

INSTRUCTIONS 
1. Heat Canola oil in Dutch oven over medium-high until thermometer in oil registers 375 degrees F. Add half of farro, fry until browned and crisp (4-5 minutes). Remove fried farro from pan with a strainer. Drain in paper towels, and immediately sprinkle with salt to taste. 
2. Combine tomatoes, peaches, arugula, onion, and mint in a large bowl. Combine olive oil, vinegar, salt, and pepper in a small bowl or jar, whisking or seal and shake until well blended. Drizzle half of dressing over tomato mixture. Arrange salad on a platter; top with burrata pieces and about 2/3 cup farro. Drizzle salad with remaining dressing, and serve immediately. 
(Remaining farro can be stored at room temperature in an airtight container for up to 1 week, or frozen for 3-4 months).

Enjoy A Hearty Chocolate Pear Cake!

When you think of pears and chocolate, you rarely think of them together. However, they are the secret match made in heaven! This chocolate pear cake is the perfect dessert that can blow everyone’s minds. 
Prep time: 15 minutes 
Cook time: 45 minutes 

INGREDIENTS 
– 1 cup all-purpose flour 
– 1/3 cup unsweetened cocoa powder 
– 3/4 teaspoon baking soda 
– 1/8 teaspoon salt 
– 1/4 cup unsalted butter 
– 4 oz dark chocolate (chopped) 
– 3/4 cup granulated sugar 
– 2 eggs 
– 1 teaspoon pure vanilla extract 
– 1/2 cup whole milk 
– 3 pears ripe, peeled, cored, & chopped into large chunks 

INSTRUCTIONS 
1. Preheat the oven to 350 degrees F 
2. Grease a 9×9 in. square pan or 9 in. round pan 
3. In a medium bowl, combine flour, cocoa powder, baking soda, and salt – mix to combine 
4. Melt the butter and dark chocolate in a small bowl, using a microwave, or on a stove top in a small pan over low heat. Stir well. 
5. Transfer melted chocolate mixture to a large mixing bowl, add granulated sugar, and beat on medium-high for a couple minutes until mixture is light in color. Add eggs and vanilla, and continue beating. Add flour mixture and milk, alternating between the two in two additions, into the chocolate mixture. 
6. Pour cake batter into pan and place pears on top of cake batter. 
7. Bake for 45 minutes or until toothpick inserted in the center comes out clean and cake bounces when touched. 
8. Cool on wire rack for 15-30 minutes. 
9. Dust with powdered sugar before serving!

Crumble:

– 1 egg, lightly beaten 
Peach Filling: 
– 5 cups diced peaches 
– 2 tablespoons lemon juice 
– ½ cup all-purpose flour 
– 1 cup granulated sugar 
– ¼ teaspoon salt 
– ½ teaspoon ground cinnamon 
– ¼ teaspoon ground nutmeg 

INSTRUCTIONS 
1. Preheat oven to 375 degrees F. Butter the bottom and sides of a 9-by-13-inch glass or light-colored metal baking pan. Put parchment paper in the bottom of the pan for easy removal. Butter the parchment. 
2. Crumble: In the bowl of a stand mixer fitted with the paddle attachment, combine flour, sugar, baking powder, salt, and cinnamon on low speed. Add the butter, toss with a fork to coat with the flour mixture. Add egg and mix on medium-low speed until the texture is like course cornmeal, with no butter pieces larger than small peas. Pat half of the dough into the pan. Place the pan and remainder of the dough in the refrigerator while the filling is prepared. 
3. Peach Filling: In medium bowl, toss diced peaches and lemon juice together; set aside. 
4. In a separate small bowl, whisk the flour, sugar, salt, cinnamon, and nutmeg. Pour over the peaches and mix gently. 
5. Spread the peach mixture over the crust evenly. Crumble the remaining dough over the filling layer. 
6. Bake for 45 minutes, or until top is slightly brown. Cool completely on wire rack and then transfer to refrigerator to chill before cutting into squares. Store in an airtight container in the refrigerator.
