Tasty and Easy Peach Cobbler Crumble Bars!

Crumble bars are always a crowd favorite, especially during the summer with a scoop of fresh vanilla ice cream. When peaches are in season, there is nothing better than a peachy dessert. These bars can be eaten for dessert or a quick sweet snack on-the-go. They are easy to make and are perfect for any summer occasion. It has a thick and buttery bottom layer smeared with sweet peach filling topped with a buttery crumble topping. 

INGREDIENTS 
Crumble: 
– 3 cups all-purpose flour 
– 1 cup granulated sugar 
– 1 teaspoon baking powder 
– ¼ teaspoon salt 
– ¼ teaspoon ground cinnamon 
– 1 cup unsalted butter (cold) 
– 1 egg, lightly beaten 
Peach Filling: 
– 5 cups diced peaches 
– 2 tablespoons lemon juice 
– ½ cup all-purpose flour 
– 1 cup granulated sugar 
– ¼ teaspoon salt 
– ½ teaspoon ground cinnamon 
– ¼ teaspoon ground nutmeg 

INSTRUCTIONS 
1. Preheat oven to 375 degrees F. Butter the bottom and sides of a 9-by-13-inch glass or light-colored metal baking pan. Put parchment paper in the bottom of the pan for easy removal. Butter the parchment. 
2. Crumble: In the bowl of a stand mixer fitted with the paddle attachment, combine flour, sugar, baking powder, salt, and cinnamon on low speed. Add the butter, toss with a fork to coat with the flour mixture. Add egg and mix on medium-low speed until the texture is like course cornmeal, with no butter pieces larger than small peas. Pat half of the dough into the pan. Place the pan and remainder of the dough in the refrigerator while the filling is prepared. 
3. Peach Filling: In medium bowl, toss diced peaches and lemon juice together; set aside. 
4. In a separate small bowl, whisk the flour, sugar, salt, cinnamon, and nutmeg. Pour over the peaches and mix gently. 
5. Spread the peach mixture over the crust evenly. Crumble the remaining dough over the filling layer. 
6. Bake for 45 minutes, or until top is slightly brown. Cool completely on wire rack and then transfer to refrigerator to chill before cutting into squares. Store in an airtight container in the refrigerator.
