Fruit-Filled Easter Delights!

Easter Fruit Salad
Ingredients:
- 1 cup of peaches
- 2 cups of pineapple
- 1 cup of apricots
- 1 cup of raspberries
- 2 medium kiwis
- ½ cup of uncooked couscous
Dressing Ingredients:
- 2 tbsp of honey
- 3 tbsp of fresh lime juice
Directions:
- Peel and chop peaches, pineapple, and kiwi (if using fresh fruits)
- Boil one cup of water and add the couscous — stir, cover, and remove from heat
- Combine all the fruit and add to the cooled couscous
- Whisk together the honey and lime juice — pour over fruit mixture and mix gently
Easter Egg Fruit Tart
Ingredients:
- 1 cup of almond butter
- ¼ cup of honey
- 2 tsp of vanilla extract
- ¼ teaspoon salt
- 2 cups of dry oats
- ¾ cup of vanilla Greek yogurt
- ¾ cup of strawberries
- ¾ cup of blueberries
- 1 medium banana
- ¾ cup of green grapes
Directions:
- Heat the almond butter, honey, salt, and vanilla in a microwave for about 20 seconds and stir until smooth.
- Blend one cup of oats until finely chopped — set aside
- Add the rest of the oats to the butter mixture and stir.
- Slowly add blended oats to the mixture
- Form Easter Egg-shaped ovals from the mixture
- Spread each egg with greek yogurt and add the sliced fruit
