Whether conventional or organic, Wawona grows and processes both Freestone and Clingstone varieties of peaches and offers year-round availability – in many different styles and packs to meet the product needs of customers. In fact, customization is a Wawona specialty. As a family-owned company for three generations, Wawona takes great pride in working closely with customers to fulfill their exact product specs – always with consistent quality and on-time delivery.
After washing, sizing, pitting, peeling and frequent inspections, the golden peach halves move on conveyor belts by professional graders who separate the fruit into Wawona’s four distinct product lines:
- The ripest, highest quality peaches are selected as Signature Sliced Peaches, which are the key ingredient in popular frozen desserts at grocery stores and in a variety of recipes at high-end restaurants
- A large number of peaches head to the blast freezer to be individually quick frozen (IQF) for peach products, blends, yogurts, etc.
- Softer peaches are sliced and designated for ice cream manufacturers
- The overripe fruit is sent to the purée line where Vitamin C and sugar are added

Journey of a Wawona Peach
From Field to Freezer
A behind-the-scenes look at how a peach, picked at peak ripeness in California’s fertile San Joaquin Valley, gets from our orchards to your freezer.
The fruit is then transferred to our cold storage facility, where the field heat is removed, and temperature is kept at 34 degrees until the peach is ready to be processed. This cooling process is an important step to allow the fruit to go onto the next step of its life cycle while preventing the ripening process that softens the peach.
